WHISKEY PEPPER STEAK with KNUTZEN'S

STEAKS

2 tenderloin filet mignon steaks

2 Tbsp cocoa powder

2 Tbsp fresh ground pepper

1 Tbsp salt

1 Tbsp chile powder

1 tsp rosemary

olive oil

crust steaks with seasoning and sear on medium in skillet or saute pan until done. then prepare the sauce in the steak pan.

WHISKEY PEPPER FLAMBE

pan with drippings from steaks

1/4 cup sliced onion

1/4 cup sliced sweet or bell peppers

2+ Tbsp Whiskey

1+ cup heavy whipping cream

fresh herbs: basil, thyme, rosemary

salt & pepper

butter

add butter to pan with drippings. saute onions and peppers until soft. cautiously flambe veggies with whiskey, and reduce. add heavy cream and herbs. simmer to thicken.
